AI app achieves near-perfect accuracy in gluten-free food checks

In a study of 100 packaged foods (1,884 ingredients), an AI-powered smartphone application classified gluten-free compatibility with 99% accuracy at the product level and 99.8% at the ingredient level. Dietitians confirmed 64 products as gluten-free, yet only 37.5% carried a gluten-free label, underscoring labeling gaps. Researchers conclude that, with rigorous evaluation, AI tools may help patients with celiac disease maintain dietary adherence.
